We were part of an experiential dinner last week that let us experience the brilliant display of culinary excellence at the signature Modern Italian restaurant, Alba in JW Marriott Bengaluru. Chef Brian from JW Marriott Phuket Resort & Spa and Alba’s Head Chef Eliyaz Mohammed at the hotel have joined hands to create a radiant display of delectable flavours in the form of a limited period menu called the ‘Four Hands Collaboration’.
Let’s talk more about the Chefs part of this collaboration. Chef Brian is the Executive Chef at JW Marriott Phuket Resort & Spa who is passionate about food operations and result oriented. His strong points are in classic and modern Italian apart from having expert knowledge in Spanish cuisine and contemporary modern European Modern Australian cuisine. Chef Eliyaz is heading the kitchen at Alba at JW Marriott Hotel Bengaluru for about a year now, his focus on creating innovative modern-day Italian dishes made from traditional produce and straight out of the farm is commendable. I’ve had the pleasure of experiencing his cooking on two occasions now and I am already a fan of Chef Eliyaz.
Our meal included a carefully crafted Pan Seared Duck Liver Foie Gras with sticky date pudding for the first course followed by an immensely flavorful and rustic Roast Chicken & Parmesan Broth.
Our main course was perfectly braised duck breast and sautéed potato gnocchi with grappa sour cherry duck jus.
There were two options for desserts, the Beets and Goat Cheese sorbet and the five-spiced Panna Cotta. I opted for the latter and totally loved it, however, the first one is a masterpiece on its own and comes from Chef Eliya’s fondness towards Beetroot.
It was a superb experience trying out the amazing dishes that are inspired by the perfect amalgamation of both Classic and Modern French Cuisine.
